Ingredients: • 1 kg lamb or beef (try this with prawns or fish) • ½ cup olive oil • ¼ cup white wine • 1 onion chopped • 1 clove garlic crushed • Juice of 2 lemons • 2 teaspoons oregano • Salt and pepper Preparation: • Trim and cube meat • Combine oil, wine, onion, garlic, lemon juice, oregano and salt and pepper in a bowl. • Add meat and mix well. Marinate for at least 2 hours. • Thread meat onto SSL spikes • Cook over medium heat; baste with left over marinade occasionally. Cooking time approx 5 minutes. |
| Sweet & sour fish kebabs | |
Ingredients: • Boneless fish fillets • 225g can pineapple pieces • 1 red capsicum • 3 teaspoons soy sauce • 6 teaspoons sugar • 2 tablespoons vinegar • 2 tablespoons tomato sauce • Salt to taste Preparation: • Cut fish into 25cm cubes. Cut capsicum into 25cm pieces. Drain pineapple (reserving juice). • Thread capsicum, fish, pineapple alternatively onto SSL • Combine in a container, soy sauce, sugar, vinegar, tomato sauce, 2 tablespoons reserved pineapple juice, mix well. Place SSL in liquid mix, refrigerate for 1 hour. • Place SSL on spitbar and cook over hot heat for 5-8 minutes. |
